Seeing as how I am prone to fits of randomness and late night snacking, I will share with you a recipe for whoopie pie filling that I just discovered a few minutes ago. As a back story, my breastfeeding wife has had an incredibly snacky appetite lately. Some of her last words tonight before falling asleep had to do with Little Debbie oatmeal whoopie pies as in lament of our snackless evening.
I wondered if I could make her something and so started rummaging through our kitchen. I found that we had some pre-made oatmeal cookie dough in our freezer, so all I needed was the filling. I Googled info on the filling and found instructions on how to make it on a page by Marshmallow Fluff. I love this stuff so was anxious to try the recipe. It’s pretty simple and tastes incredible.
Whoopie Pie Filling – from marshmallowfluff.com
* 1/2 c. butter or margarine
* 1 c. confectioners’ sugar
* 1 c. Marshmallow Fluff (about 1/2 of a 7 1/2-oz. jar)
* 1 tsp. vanilla
In a medium bowl with mixer at medium speed, beat butter and remaining ingredients until light and fluffy.
