I’m sending along one of my favorite comfort food cookies…it was the first cookie we ever made for the PMS Kookie Kompany! I may sound like a little bit of work, but it’s totally worth it!
Preheat oven to 325 degrees. Begin with room temperature butter and room temperature eggs. Don’t skimp on the butter…make it really lovely high butter fat butter!
1 1/2 C. Butter
1 1/2 C. Brown Sugar
1 C. White Sugar
1 T. Bourban Vanilla
1 T. Chocolate Syrup
1 T. Maple Syrup
(Blend these ingredients in large mixing bowl.)
4 C. Unbleached flour
2 t. Salt
2 t. Baking Soda
1 T. Cocoa Powder
(Combine all dry ingredients and add to creamed butter and egg mixture. Mix until just combined)
1 C. Honey Roasted Cashews
2 C. Semi Sweet Chocolate Chunks
(Add nuts and chocolate chunks to dough.)
Dip scoops of dough onto ungreased cookie sheet, or cookie sheet with parchment paper (for easier clean up). Bake for 12 to 15 minutes at 325 degrees.
Hint: I use an ice cream scoop.
While the cookies are baking and cooling, gently fold together:
1/2 C. Skippy Creamy Peanut Butter
1 Container Marshmallow FLUFF
This will make a sticky dough.
Once the cookies have cooled off completely, pair them up together and sandwich them with a generous scoop of peanut butter fluff.
