St. Patrick’s Day, though not a “big” holiday like Christmas or even Valentine’s Day, still deserves some recognition, at least around my house! I like celebrating any holiday with my family, if to only break up the daily grind.
These chocolate chip cookies incorporate Bailey’s Irish Cream — which, I know, not kid appropriate! — but a separate batch of cookies (my kids would prefer sugar cookies that they can cut out and frost themselves) would work well too. Save these for mom and dad!
Bailey’s Irish Cream Chocolate Chip Cookies
1/2 cup softened butter
1/2 cup granulated sugar
1/2 cup brown sugar
2 teaspoons vanilla
1/2 cup Bailey’s original Irish cream
2 1/4 cups cake flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package semi-sweet chocolate chips
1/2 cup chopped pecans
3/4 cup coconut (optional)
~ Preheat the oven to 375 degrees.
~ Cream together butter, sugars and egg until fluffy. Add vanilla and Bailey’s Irish cream.
~ Mix the dry ingredients and blend them into the creamed mixture.
~ Add chips, nuts and coconut. Drop by tablespoonfuls onto a cookie sheet and bake for 8-10 minutes.
~ Cool on a wire baking rack.
Makes about 3 dozen cookies.
