It’s that time of the week again: Back to work, back to the week’s meal planning, and don’t forget: Meatless Monday. You may have had your heart set on ordering a pepperoni pizza, but we urge you: Do like we (try to) do, and skip meat for today. Just today; if you do it every week it adds up. And if you get your friends and family to munch on vegetables and grains instead of meat and potatoes with you, it really adds up.
