Meatless Monday: 10 Vegetarian St. Patrick’s Day Recipes

Green is the official color of St. Patrick’s Day, but it’s not the best way to describe the food we’ll be eating with our Guinness: Most traditional Irish recipes are meat-heavy, which isn’t so kind to the environment. (Not to mention your waistline.) To help you carry the spirit of Meatless Monday through this week’s holiday, we found ten vegetarian and vegan St. Patrick’s Day recipes. Sláinte!

      Briana, the recipe for Vegan Dad’s corned beef says it takes an hour and a half. It’s the REAL corned beef that takes ten days! :)

      Most of these recipes do look delicious…However, most of them are not “spur of the moment” recipes. It looks like most of them require a trip to the grocery store for special ingredients. While the recipes look delicious, with the exception of the Irish Stew recipe, I think I might pass. As I get older, I the greater the value I place on simplicity. Anyway, that is just my take on this collection of recipes.
