Yesterday was the first day of spring, and while it may not be warm enough to ditch your winter coat, but signs of spring are already here in our farmer’s markets and grocery stores. From asparagus and leeks to fennel, watercress, peas, and artichokes, fresh spring produce is here, (and there’s only more headed our way as the weather warms up). This isn’t just great news for those of us who’ve grown weary of potatoes and kale; it’s also fantastic news for Meatless Monday; more seasonal produce means tons of easy recipes full of tasty, nutritious ingredients.
