Growing up, the only cherries I knew were the maraschino variety: soaked in bright red, sugary syrup, mixed with oranges, pineapples and whipped cream in a dish my family called “heavenly hash.” Thankfully, my culinary world has expanded since then, and I’ve come to know the delight of big, juicy, fresh cherries on a summer day. And with cherry season upon us (it starts in June and lasts through about August), it’s time to dig in.
