Raw Energy Balls, from Dr. Lissa Rankin, M.D.
I just made up this recipe and it’s INCREDIBLY yummy- like healthy raw chocolate chip cookie dough! Even my 5 yr old loves these…and great mid afternoon energy boost (with a glass of green juice).
(Forgive me: I never measure, so my “recipe” is based on guesstimates…)
Mix in a food processor:
4-5 cups of raw cashews
Coconut oil warmed to just barely liquid (I put it near my fireplace)- about 1/3 cup or as needed for right consistency
1/3 cup almond butter, sunflower butter, cashew butter
1/2 cup coconut flakes (optional)
1/2 cup Goji berries (or raisins, currents, etc-optional)
1/4 tsp salt
agave to taste (depends how sweet you like it)- maybe 1/4 cup
raw cacao nibs (optional)
Blend, roll into balls, and chill in fridge. YUMMY!
