Brussels sprouts are one of my favorite fall—and Thanksgiving—dishes, but let’s face it: They can get really boring. A lot of recipes spice them up with pancetta, bacon, or some other kind of pork, but you can make them interesting without a coating of animal fat, too.
For this week’s Meatless Monday, we rooted out 10 vegetarian brussels sprouts recipes. They’re better than your average roast or braise: Some have unique sauces and additions (grapes and pecans, anyone?) and some are full meals. Eat up!
