Yesterday marked the first day of Hanukkah, which means—food-wise, at least—that it’s time for potato latkes. Basic latkes are made from potato, onion, eggs and olive oil, served with applesauce or sour cream. But there are all sorts of interesting (and delicious sounding) variations out there, including ones for vegans and the gluten-intolerant. Some even eschew potatoes altogether, opting for pancakes made from leeks, parsnips, apples or cauliflower. This year, try celebrating the Festival of Lights with one of these non-traditional latke recipes.
