Fresh peas (not frozen) are probably one of the best things you’ll find in the market throughout spring, but all too often they get thrown into a bowl of pasta with bacon and butter…which is delicious, don’t get me wrong, but it’s not vegetarian, and once you start exploring, you’ll find it’s actually not that creative a way to use such vibrant spring produce.
