I’m writing this post from my air-conditioned local coffee shop, because I’ve been out of power since Friday night (with no restoration in sight, FYI. Did I mention it’s 95 degrees? YEP!) Rather than spending all my money eating at restaurants, I decided to look for a few easy, healthy recipes I can make without baking, boiling, or refrigerating anything. These are all made with non-perishable ingredients, although there are a few veggies in the mix.
Try these if your power’s out or even if it’s just too hot to turn on the stove. Save these for hurricane season, too!
