Meatless Monday: 10 Vegetarian Summer Squash and Zucchini Recipes

‘Tis the season when gardens and farmer’s markets are filled with a bounty of fresh summer squash and zucchini. It’s delicious, but if you don’t get a little creative, it can also get really boring. We love it plain, cut in half, grilled with olive oil salt and pepper; but for Meatless Monday, we want to experiment with other summer squash recipes.

    Somehow it’s never occurred to me to go full veg with tacos. I’ve always at least used a meat substitute. I’m looking forward to trying that recipe out!

      It can be really good! Although I’m like you…I tend to use tempeh if I’m not using meat.
