When I was a kid, my mom would always make blue Jello on a blue moon. Which means we literally only ate blue Jello once in a blue moon. And honestly, that’s probably as much as any person should ever eat Jello. But there are other (vegetarian- and vegan-friendly) blue foods to celebrate this somewhat-rare lunar event. Like blueberries, which are a true superfood.
If you’re celebrating tonight’s blue moon, consider making one of these super-yummy, super-nutritious, superfood-including blueberry recipes. They’re a little healthier than my mom’s blue moon Jello**, but just as festive.
**But if you’re not a vegetarian and you want to remain traditional, you can always just add blueberries to the blue Jello and call it good. I wouldn’t fault you for that.
