It’s embarrassing to admit, but even as a technically grown woman, I struggle with packing lunch and bringing it to work. I’m lazy and forgetful and a lot of the time, I’d rather run out to grab a beer with friends than even consider the fact that I’ll be alive and hungry in 15 hours. Planning ahead feels like such a commitment and I hate commitment almost as much as I hate responsibilities and being honest about my feelings. Going out to lunch or just skipping the meal isn’t working out for me financially or health-wise, so I’m trying to change my ways.
I don’t have a lot of cookware, skills or attention to spare, so lunches I make will have to be simple. To complicate matters further, I’m trying to live forever, so I would like my lunches to be healthy. Taking inspiration from my responsible friend’s daily lunchbox and super delicious morsels I pick up when I’m not shame-eating pizza, I think I’ve cracked the code to the perfect lunch that won’t ever get boring.
The magic formula:
1 grain + 1 Leafy vegetable + 1 Legume or Root Vegetable + Cheese = Delicious lunch
How customizable is that shit? Mix and match different varieties of each component for versatile flavors and vitamins. Add more vegetables and spices if you want–the responsible friend who inspired this post even adds a poached egg. It turns into a fancy gruel when you mix it all up. A fancy gruel of your own. My favorite combination is red quinoa with kale, chick peas, beets, green beans and feta.
The beauty of the fancy gruel formula is that it gets better in the fridge (if you add the cheese right before you eat), so you can make a huge batch and then go at it for days.
