Dried Soba

Back to the basics today – dried soba noodles.  Most supermarkets around the world will sell you noodles.  This is one of the more common varieties.  Soba noodles are pale grey straight noodles made from buckwheat flour and little else.  Dried, they look unappetising, but after about 4 minutes in boiling water they come back to life.  A bundle is about enough for one medium sized serve and most packs come with 3 or 5 bundles.  Boil it, drain it, rinse it under cold water to stop it overcooking and serve it cold or drop it into soup and serve it hot.  Soba noodles are one of the magic 3 Japanese “stay-alive-for-ever” foods.  I love them.
