With the economy the way it is, many people are having to trim their budgets where they can. More often than not it’s usually the grocery list that suffers since it’s a common misconception that healthier food is too expensive
However, Divine Caroline has written out a list of the top 20 healthy foods under $1. It includes some you’d expect like apples, beans and bananas, but also foods like eggs, oats, and coffee:
“The old cup-o-joe has been thrown on the stands for many a corporeal crime—heart disease, cancer, osteoporosis—but exonerated on all counts. In fact, coffee, which is derived from a bean, contains beneficial antioxidants that protect against free radicals and may actually help thwart heart disease and cancer. While it’s not going to fill you up like the other items on this list, it might make you a lot perkier. When made at home, coffee runs less than 50¢ cents a cup.”
She also offers serving suggestions and links to recipe for most of the items on the list, and a lot of them are pretty interesting. Check out the orange hummus, pumpkin-apple breakfast bread, and tofu cheesecake. I’ve already printed out the spinach frittata and pear and squash bruschetta!
