20 Ways to Use Those Fresh Tomatoes

canningMid-August is tomato season in the Midwest and Northeast and few things are as delicious as just-off-of-the-vine tomatoes. However, as prized as these vegetables are in the dead of winter, at this time of year, there often seems to be more of them than one can possibly use. Below are just a few of our favorite healthy ways to use fresh tomatoes:

1. Make Salsa.
2. Slice them and serve with blue cheese, onion, and balsamic vinegar.
3. Make tomato sauce.
4. Make tomato soup.
5. Make bruschetta.
6. Combine cubed tomatoes with cucumbers, onions, and vinaigrette.
7. Can them for use in the off-season.
8. Make Tomato Vinaigrette.
9. Prepare Roasted Salmon over Cherry Tomatoes.
10. Make healthy stuffed peppers.
11. Bake a Tomato Casserole.
12. Make Baked Green Tomatoes.
13. Can Tomato Chutney.
14. Prepare angel hair pasta topped with basil and diced tomatoes.
15. Stir-fry tomatoes with onion, garlic, and asparagus.
16. Bake stuffed tomatoes.
17. Create sun-dried tomatoes.
18. Make ceviche.
19. Bake chicken with tomatoes and olives.
20. Prepare a corn and tomato salad.

    Some great tomato ideas!

    One of my faves is tomato capresse. Alternate thin slices of tomato and mozzarella to form a circle. Drizzle with balsamic vinegars and olive oil. Spinkle some chopped fresh basil on top. Let sit a while for the flavors to meld before serving. Yum!

    Try drying them. They taste like fruit when eaten out of hand and lend a commanding tomato taste to sauces without adding any liquid. I have two cheap “Ronco” dehydrators and dry my tomatoes when I haven’t enough to bother canning.
