Apple Puff Pancake

Terry Coulter is a Martha Stewart viewer and this past week became a part of the Martha Stewart:  America Cooks Series.

Terry shared a delicious looking recipe for an Apple Puff Pancake.  It is an old 70’s recipe that she adapted.  Basically, you chop up some apples, make a type of crepe batter and cook it in the oven.  It looked incredible and most importantly for me, easy.  It would make a great breakfast or brunch.  Martha cooked up some great Brown Sugar Glazed Bacon to go along with it.

Terry also suggested that if you want to have it for dessert, double up on the sugar and cinnamon and serve it with some ice-cream.
