<p><strong>Antipasto</strong> is a plate of goodness that Italian&#8217;s serve before the main meal. It&#8217;s sometimes mistaken as hors d’oeuvres which is a mistake. Hors d’oeuvres are mostly finger foods wherein it&#8217;s either served to you while standing up or you serve yourself with from an hors d’oeuvres table. Antipasto on the other hand is served at the dining table before the main entrée and eaten with s small plate. </p>
<p>The antipasto I got had salami, pepperoni, black olives, 2 kids of peppers, tomato slices, slices of white cheese, ham, and lettuce. I drizzled Italian dressing  came with the take-out on top. </p>

<p><strong>Ingredients</strong>:<br />
2 cups mashed Idaho potatoes (prepared according to package directions using half of a 22 oz. bag frozen Idaho mashed potatoes), <em>or, used leftover mashed potatoes</em>.<br />
2 cups frozen corn kernels (thawed) or cooked corn cut off the ear<br />
1 egg, slightly beaten<br />

<blockquote><p>   1.  In a medium mixing bowl, combine potatoes, corn and egg; mix well with a spoon.</p>
<p>   2. Place bread crumbs in a shallow bowl. Using clean hands, form mixture into 1 1/2inch diameter patties; dip each pattie in bread crumbs, coating both sides.</p>
<p>   3. Over medium heat, in a large non-stick skillet, heat 2 tablespoons of the canola oil until hot. Fry the patties, a few at a time, for 2 minutes, or until golden brown on the bottom; flip and cook another 2 minutes on the second side. (If flatter, more crispy cakes are desired, flatten cakes while cooking with a metal spatula).</p>
<p>   4. Transfer finished cakes to a baking sheet and keep in a warm oven (200 degrees) until all cakes are cooked. Transfer cakes to a serving platter and serve with salsa, if desired. </p></blockquote>
<p>On the 1st ingredient I indicated that we could probably use leftover mashed potatoes instead of making a new batch. So this <strong>corn and potato pancakes</strong> recipe is something to think off when you have leftover mashed potatoes from dinner. </p>
<p>I&#8217;m going to plan a Friday&#8217;s dinner with mashed potatoes and use the leftovers for our Family&#8217;s Saturday Brunch. This would be great with eggs and bacon. Hey, I think it&#8217;s also a good side dish for any meat dishes. </p>

		<description><![CDATA[To go along with Hubby&#8217;s Black &#38; Blue burger, I decided to make baked sweet potato fries. When I told him I&#8217;d bake the fries he was a little hesitant but said whatever I decide goes, of course. I just did not want to deal with grease that day. Besides, baking was the healthier way in cooking the sweet potatoes.
INGREDIENTS:
3 large sweet potatoes, washed thoroughly
2 tbsp olive oil
dried basil
dried parsley
dried oregano
garlic powder
paprika
salt and pepper

Preheat the oven to 365°.

			<content:encoded><![CDATA[<p>To go along with <a href="http://www.blisstree.com/articles/black-blue-burger/">Hubby&#8217;s Black &amp; Blue burger</a>, I decided to make baked sweet potato fries. When I told him I&#8217;d bake the fries he was a little hesitant but said whatever I decide goes, of course. I just did not want to deal with grease that day. Besides, baking was the healthier way in cooking the sweet potatoes.</p>

<p><strong>INGREDIENTS:</strong><br />
3 large sweet potatoes, washed thoroughly<br />
2 tbsp olive oil<br />
dried basil<br />
dried parsley<br />
dried oregano<br />
garlic powder<br />
paprika<br />
salt and pepper</p>

<p>Preheat the oven to 365°.</p>
<p>Cut the fried in thin strips. Peel them first if you prefer &#8216;e, that way. Leaving the skin on is good too.</p>
<p>In a bowl, put the sweet potato fries. Drizzle 1 tbsp of olive oil. Sprinkle dried parsley, dried oregano, dried basil, paprika, garlic powder, salt and pepper. Mix everything together with your hands making sure everything is coated.</p>
<p>Using two cookie sheet pans, drizzle half a tbsp of olive oil on the pans. Brush the oil all over. Lay the sweet potato fries on top.</p>
<p>Bake it in the oven for 35-40 minutes. Ranch dressing is a good dip for Baked Sweet Potato Fries.</p>

<p><strong>INGREDIENTS:</strong><br />

<p>Combine the ground beef, dried oregano, dried basil, Worcestershire sauce and salt together. Mix &#8216;em all up and shape the patties. 4 thick burger patties.</p>
<p>Cook the patties on an electric griddle or grill. Cook one side. Halfway through cooking, sprinkle half of the Zatarains blackened seasoning on top of the patties. Continue to cook according to how you like your patties. Then flip to cook the other side. Sprinkle the remaining blackened seasoning on top of the patties. Once the other side cooks, flip the patties one more time but turn down the heat of the griddle. Add the crumbled blue cheese on top. Let the cheese sit for 30 seconds or so.</p>
<p>Brush melted butter on the inside of the buns. Slightly toast them in the griddle.</p>
<p><strong>Plate your burger</strong> : Bottom bun, blackened patty, blue cheese on top, tomato slice, lettuce, then the top bun.</p>
<p>The combination of the peppery patties and the blue cheese flavor will dance in your mouth deliciously.</p>

<p>Let everything cook for about 12-15 minutes, stirring occasionally. </p>
<p>Add shredded cheddar cheese on top if you want before transferring onto a serving plate. This would be a great spinach dip for chips if you add the cheese. </p>

		<description><![CDATA[More often than not, the salad from restaurants or pre-made salad from grocery stores are better than the ones I make at home. I&#8217;ve only been successful in salads when I buy the organic pack from the grocery store and then make my own vinaigrette. 
Digging into a plate of pre-made Ranch Cobb salad was definitely delish for lunch. It even came with a buttermilk ranch dressing.

The <strong>ranch cobb salad</strong> from Wal0Mart also had shredded red cabbage, carrots, cheddar cheese, black olives, boiled egg, crispy bacon and cubes of cooked chicken breast. </p>
<p>A perfect and filling salad for lunch that&#8217;s for sure. </p>
