<ul>
<li>4 medium Idaho potatoes (about 2 pounds), scrubbed</li>
<li>1 cup thinly sliced onions</li>
<li>1 cup reduced-sodium ham steak, cubed (about 5 ounces of pieces)</li>
<li>1 cup fat-free, reduced sodium canned chicken broth</li>
<li>1 tablespoon all-purpose flour</li>
<li>1/2 teaspoon minced garlic</li>
<li>1/8 teaspoon ground black pepper</li>
<li>1 1/4 cup reduced-fat, extra sharp, shredded cheddar cheese (such as 2% milk varieties)</li>
</ul>
<p><strong>Directions: </strong></p>
<ol>
<li>Cut scrubbed potatoes in half lengthwise, then cut each half into ¼-inch thick slices (not too thin or they&#8217;ll fall apart during cooking).</li>
<li>Place the potatoes, onions, and ham into a slow cooker crock (must be at least 4 quart capacity). In a liquid measuring cup, stir together the broth, flour, garlic and pepper.</li>
<li>Pour the mixture over the potatoes, then stir with a wooden spoon to distribute all ingredients.</li>
<li>Cover and set slow cooker to HIGH (use LOW setting for 6 hour cooking time). Cook for 3 hours, stirring once after about 2 hours of cooking time. When done, uncover and stir in the shredded cheese. Divide mixture between 4 bowls.</li>

<li>Prepare an 8 x 8 inch baking dish, pan or similar sized oval casserole dish with non-stick cooking spray.</li>
<li>In a medium sauce pan, bring broth to a boil over medium-high heat. Remove from heat and stir in cream cheese and contents of Au Gratin Potato seasoning packet.</li>
<li>Mix in dry potatoes, onion, thyme, avocado and 1/2 of the Jarlsberg cheese.</li>
<li>Pour into baking dish, making sure that all potatoes are submerged in the liquid.</li>
<li>Bake in 350 degrees F oven for 30 minutes.</li>
<li>Sprinkle remaining cheese on top and bake an additional 15 minutes.</li>
<li>Let stand 10 minutes before serving.</li>
</ol>
<p>*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.</p>

<li>Shape into 24 (about 3/4-inch) balls. Place on wax paper-lined tray. Refrigerate until ready to dip.</li>
<li>Coat only 12 truffles at a time. Melt 4 ounces of the remaining chocolate in small microwavable bowl on MEDIUM, 1 1/2 minutes, stirring after 1 minute. Using a fork, dip 1 truffle at a time into the chocolate.  Place on wax paper-lined tray. Sprinkle truffles with nutmeg.  Repeat with remaining 4 ounces chocolate and remaining truffles.</li>
<li>Refrigerate 1 hour or until chocolate is set. Store truffles in refrigerator up to 1 week.</li>
</ol>
<p>Makes 2 dozen.</p>

<p><strong>Directions:</strong></p>
<p>1. Preheat oven to 375 degrees F. In a large mixing bowl beat butter on medium to high speed for 30 seconds. Add granulated sugar, baking powder, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in egg, milk, and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Divide dough in half. If necessary, cover and chill dough about 30 minutes or until easy to handle.</p>
<p>2. On a lightly floured surface, roll half the dough at a time to 1/8 inch thick. Use a 2-or 4-inch candy-cane-shape cookie cutter to cut dough. Place cutouts 1 inch apart on an ungreased cookie sheet.</p>
<p>3. Bake for 7 to 8 minutes or until edges are firm and bottoms are very lightly browned. Transfer to a wire rack and let cool. If desired, tint part of the Powdered Sugar Icing and/or Creamy White Frosting bright red with food coloring; decorate cookies with white and red icing and/or frosting, sanding sugar, and candies. <p>*Powdered Sugar Icing: In a small bowl combine 2 cups powdered sugar, 1/2 teaspoon vanilla, and 2 tablespoons milk. Stir in additional milk 1 teaspoon at a time until icing reaches desired consistency.</p>
<p>*Creamy White Frosting: In a large mixing bowl beat 1 cup shortening, 1-1/2 teaspoons vanilla, and 1/2 teaspoon of almond extract with an electric mixer on medium speed for 30 seconds. Slowly add in about half of the 4 cups of powdered sugar, beating well. Add 2 tablespoons of milk. Gradually beat in the remaining 2 cups of powdered sugar and 1-3 tablespoons more milk to reach spreading consistency.</p>
<p><strong>To Store: </strong>Place undecorated cookies in an airtight container; cover. Store at room temperature for up to 3 days, or place in a freezer container and store for up to 3 months. Thaw frozen cookies before decorating. Or, allow decorated cookies to stand until completely set. Layer decorated cookies between sheets of waxed paper in an airtight container. Store in refrigerator up to 3 days or freeze up to 3 months.</p>

<li>1 Tbsp. extra-virgin olive oil</li>
<li>2 Tbsp. finely chopped red onion</li>

<p><strong>Hass Avocado and Cucumber Relish – Make Ahead</strong></p>
<ul>
<li> 1 ripe, Fresh Hass Avocado, peeled, seeded and diced</li>
<li>2 Tbsp. peeled, seeded and finely chopped English cucumber</li>
<li>3 Tbsp. finely diced red onion</li>
<li>1 small red radish, diced</li>
<li>1 tsp. finely chopped fresh parsley</li>
<li>3 tsp. red wine vinegar</li>
<li>1 tsp. extra-virgin olive oil</li>
<li>Salt, to taste</li>
</ul>
<p><strong>Instructions:</strong></p>
<ol>
<li> Heat a medium sauté pan over medium-high heat.</li>
<li>Add the oil and the onions to the pan; cook for 2 minutes stirring often.</li>
<li>Add in the garlic and cook for 1 minute, then stir in the peppers, honey and tomatoes.</li>
<li>Cook for 3 to 4 minutes or until most of the liquid from the tomatoes has evaporated and the mixture begins to thicken.</li>
<li>Add in the green onions and chicken and mix well. Season with salt and pepper to taste and remove from heat.</li>
<li>Heat the tortillas in a separate small sauté pan over medium-high heat for 15 seconds on each side to warm through.</li>
<li>Divide and spoon the chicken mixture among the tortillas, top each taco with the Hass Avocado and Cucumber Relish, garnish with cilantro leaves and serve immediately.</li>
</ol>
<p><strong>Hass Avocado and Cucumber Relish &#8211; Make Ahead</strong></p>
<ol>
<li>In a large mixing bowl, combine the avocado, cucumber, red onion and radish.</li>
<li>Add in the parsley and red wine vinegar, and slowly drizzle in the oil until combined.</li>
<li>Season with salt to taste. Cover and refrigerate until use.</li>

<p><strong>Directions:</strong></p>
<ol>
<li>Prepare 1 recipe Gingerbread Cookie Dough as directed.</li>
<li>Roll dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes with 5-inch cookie cutter. Place 1 inch apart on ungreased baking sheets.</li>
<li>Bake in preheated 350 degrees F oven 8 to 10 minutes or until edges of cookies are set and just begin to brown. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely. Decorate cookies with Colorful Royal Icing or as desired.</li>
</ol>

<p><strong>White Chocolate Kissed Gingerbread Cookies</strong></p>

<li>1 recipe Gingerbread Cookie Dough (above)</li>
<li>60 white and milk chocolate swirled kiss-shaped candies</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Prepare 1 recipe Gingerbread Cookie Dough as directed</li>
<li>Shape dough into 1-inch balls. Roll in granulated sugar. Place 2 inches apart on ungreased baking sheets.</li>
<li>Bake in preheated 350 degrees F oven 8 to 10 minutes or until edges of cookies just begin to brown. Immediately press a chocolate candy into center of each cookie. Remove to wire racks; cool completely. Store cookies in airtight container up to 3 days.</li>
</ol>

<li>1 jar (7 ounces) marshmallow cream</li>
<li>1/4 cup (1/2 stick) butter, softened</li>
<li>4 ounces (1/2 package) cream cheese, softened</li>
<li>1 teaspoon McCormick Pure Lemon Extract</li>
<li>1 cup crushed peppermint candies</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Prepare 1 recipe Gingerbread Cookie Dough as directed.</li>
<li>Shape dough into 1-inch balls. Roll in granulated sugar. Place 2 inches apart on ungreased baking sheets.</li>
<li>Bake in preheated 350 degrees F oven 8 to 10 minutes or until edges of cookies just begin to brown. Remove to wire racks; cool completely.</li>
<li>Mix marshmallow cream, butter, cream cheese and extract in medium bowl until well blended. To assemble whoopie pies, place about 1 tablespoon filling on the flat side of 1 cookie. Top with a second cookie, pressing gently to spread the filling. Roll sides of whoopie pies in crushed candy. Repeat with remaining cookies. Refrigerate whoopie pies between layers of wax paper in airtight container up to 5 days.</li>
</ol>
<p>Makes 2 1/2 dozen.</p>
<p><strong>Flavor Variations:</strong> Whoopie pies can also be rolled in chopped pistachio nuts, toasted sliced almonds or mini chocolate chips.</p>

<p><strong>Directions: </strong></p>

<li>Preheat the oven to 350 degrees. Put the almonds on a small sheet pan or pie plate and toast for 17 minutes, or until browned but not too dark. Coarsely chop and set aside.</li>
<li>Meanwhile, put the potatoes in a large saucepan with 2 quarts cold water and 1 teaspoon salt. Bring to a boil over high heat, reduce the heat, simmer for 20 to 25 minutes, or until tender. Drain. Cut the potatoes while still warm and put into a large bowl. Add the green onions, capers, almonds, mint, and basil. In a small bowl, mix the oil, vinegar, and lemon juice with the crushed red pepper. Season with salt and black pepper to taste. Pour over potato mixture and mix well. Allow to cool to room temperature.</li>
<li>Taste before serving, as potato mixture may absorb some of the flavors. Add more spices if necessary.</li>
<li>Serve with any grilled fish or meat or other simple entrées.</li>

<li>1 tsp. baking soda</li>
<li>1/8 tsp. salt</li>
<li>1/2 cup apples, skinless, finely chopped</li>

<li>2 large egg whites</li>
<li>3 tbsp. vegetable oil</li>
<li>2/3 cup plain yogurt</li>
</ul>
<p><strong>Directions</strong></p>
<ol>
<li>Preheat oven to 350 degrees F.</li>
<li>In a bowl, combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt, and apples.</li>
<li>Add sweet potatoes, egg, egg whites, oil, and yogurt. Stir all ingredients thoroughly.</li>
<li>Spray muffin tins with vegetable cooking spray and spoon 1/4 cup of batter per muffin.</li>
<li>Bake for 20-25 minutes or until done.</li>

<p><strong>Ingredients</strong></p>
<ul>
<li>8 large eggs, cold</li>
<li> 1 pound high quality bitter sweet chocolate, chopped coarse</li>
<li>1 pound high quality semi-sweet chocolate, chopped coarse</li>
<li>16 tablespoons (2 sticks) butter, unsalted, cut into 16 pieces</li>
<li>1/4 cup strong black coffee or liqueur (optional)</li>
<li>Confectioners&#8217; sugar or unsweetened cocoa for dusting the cake (optional)</li>
</ul>
<p><strong>Preparation</strong></p>
<ol>
<li>Position oven rack to the lower-middle part of the oven and heat oven to 325 degrees F.</li>
<li>Line the bottom of an 8-inch springform pan with parchment paper or waxed paper and grease the sides of the pan.</li>
<li>Beat eggs in a bowl of a standing mixer at high speed until the volume doubles, about 5 minutes.</li>
<li>Meanwhile, melt the chocolate and butter (adding the coffee, if using) in a large heatproof bowl set over a pan of almost-simmering water until smooth and very warm (about 115 degrees on a instant-read thermometer), stirring once or twice. Fold a third of the egg foam into the chocolate mixture using a large rubber spatula until only a few streaks of egg are visible; fold in half of the remaining foam, then the last of the foam, until the mixture is totally incorporated.</li>
<li>Scrape the batter into the prepared springform pan and smooth the surface with a rubber spatula. Set the roasting pan on the oven rack and pour in enough boiling water to come about halfway up the sides of the springform pan. Bake until the cake has risen slightly, the edges are just beginning to set, a thin glazed crust has formed on the surface, and an instant-read thermometer inserted halfway into the center reads 140 degrees F, 22 to 25 minutes.</li>
<li>Cover and refrigerate overnight.</li>
