Better Breakfast Month Coming Up

Muesli BreakfastLately, it’s becoming more and more difficult for me to get a decent breakfast. I’m already on the go, without even having had some fuel!

But as September is designated as the Better Breakfast Month, I’m making a mental note to start preparing better breakfasts for myself even when there doesn’t seem to be enough time to sit down and eat, much less chop and cook. For those of you who are also always on the run, especially in the mornings, here are some tips I’ve unearthed, courtesy of Salisbury University (pdf file), which includes breakfast options you can whip up in a New York minute:

  • Whole grain cereal (pick one with lots of fiber and not too much sugar), sliced banana and milk.
  • Yogurt with fruit.
  • Peanut butter on whole grain bread.
  • A smoothie with fruit and yogurt.
  • Hot oatmeal is great for a crisp fall morning. Add chopped nuts and dried fruit or spice it up with cinnamon and cloves.

Perhaps I can manage to have more than just coffee for breakfast for the entire month of September, at least!

Maybe you don’t eat eggs, but a great breakfast on the go is eggwhite salad on whole wheat crackers. I cheat and buy mine at Trader Joes. It’s only 100 calories for the entire 6 oz. container and 4 g of fat (0 saturated), 14 g of protein, 8 percent RDA of Vitamin A, 40 percent RDA of Vitamin C and no fake fillers like high fructose corn syrup or trans fat. I spread it on whole wheat crackers or toast and eat that with a piece of fruit and I am good to go until lunch.

I am terrible at eating breakfast. I usually just don’t, and I know that is a terrible habit. I think I just need to find something that I really like, and maybe that will help me eat breakfast more consistently.

I always start my day with the best all natural granola I’ve found. Nutty Steph’s Granola. You can only buy it on-line. It is the BEST breakfast + my kids love it for snacks.
