Breakfast of Champagne Champions

blueberry and ricotta pancakesGood thing I was flipping through the latest Food & Wine on Christmas Eve because it gave me inspiration for breakfast the next morning. A quick trip to the grocery store got the two necessary ingredients as well as the fixin’s for mimosas, and Christmas morning found me before 7 am in the same place I’ve been spending a lot of time over the past week. Two dishes and both went perfectly with Cristalino Cava Brut & orange juice.  The blueberry and ricotta pancakes were light and fluffy, topped with extra blueberries warmed through with lemon juice and brown sugar.  The o.j. made the berries pop even more, and the effervescense did wonderful things to my tongue. The other item was a smoked salmon omelette scramble with feta cheese and red onions, so that made for classic pairing of eggs and sparkling wine.  Even though it was only a $6 bottle, I think we all felt pretty fancy.  That’s the great thing about bubbly. It can pick you up when you’re down, but if you’re already happy…it just makes the moment that much more special.

    Can I have this sometime? Doesn’t have to be breakfast….pancakes and bubbly will do just fine anytime for me, YUM!!!

    Sure! We can make a day of it sometime when you return. I’ll make brunch and then we can go shopping. But not for wine…I have no more room. See previous post to Santa.

    P.S. The blueberry/ricotta pancakes also made a tasty snack the next day – chilled in the frig. I’m thinking desert recipe options opening up additonal wine choices?????
