Buckwheat Pancakes

Here’s a (somewhat) healthy alternative to regular pancakes.
Buckwheat Pancakes Recipe
1 cup buckwheat flour
2 tablespoons of baking powder
1/2 teaspoon of salt
1 egg beaten
1 cup of milk
2 tablespoons of melted butter
Preheat your griddle or skillet to about 475` and lightly oil. Mix the dry ingredients together, then add the egg, milk, and butter. Mix everything well and pour 1/4 cup of batter for each pancake onto the hot griddle. Cook for 1 to 1 1/2 minute on each side, until the edges are bubbly.
Top with maple syrup, honey, or all fruit preserves. These are delicious. I like the flavor the buckwheat gives them.
