Bulk Lasagna

Lasagna is one of those things where if you make one you may as well make four. One makes just as big a mess.

One for the corporate dinner party. One for the family reunion, one to give away or take to a potluck, one for the freezer for later. If I’d had more pans I’d've made even more.

Lasagna Recipe

Layer 1

Ground beef with minced garlic and onions.

Layer 2

Tomato sauce, diced tomatoes and Italian spices: rosemary, thyme, tons and tons of basil, oregano, throw in a bay leaf if you have one.

Layer 3

Parmesan cheese, cottage cheese, mozzarella cheese and ricotta cheese – smooshed all together.

Layer 4

Lasagna noodles (the oven-ready ones really do work just as well.)

Noodle, beef, sauce, cheese, noodle, beef, sauce, cheese – so easy my kids can do it, as you can see. Layer fresh spinach if you have it and top with mozzarella.

    A trick my Mom taught me that works well is mixing egg and Oregano with your Ricotta. It provides it with some firmness and color when you slice into the Lasagna. It also allows you to slice the mozzarella so you get the ‘gobs’ of stretchy lasagna when you scoop a bite.

    Mmmm. I’m hungry!

    The oven ready noodles are an awesome idea – Getting the noodles out of the pot and layered neatly is always a real chore for me.

  6. I mix egg in mine too. Until now I didn’t know why though. lol Thanks for that.

    I still have some lasagna in the freezer. You’re right. If you’re going to make one, you might as well make more. I usually make 2 at one time. I make one for me and the kids and I make a pasta free one for my hubby. Yep. Here’s the recipe:
