Chicken Stir Fry With Fried Rice

The other day I used some of the leftover vegetables from the vegetable tray I made last weekend to make a stir fry. I used brown rice and used my fried rice recipe to cook the rice. I picked up some chicken while I was at the grocery, then added several of the leftover vegetables from the tray, and an onion from my garden.

Chicken Stir Fry
- 1 lb chicken breast chopped
- 2 cups broccoli chopped
- 2 cups chopped carrot
- 1/2 medium yellow onion chopped
- 2 tablespoons extra virgin olive oil
- light soy sauce
- 1/2 cup celery
I chopped and cooked the chicken in the olive oil. Then I added all the vegetables and cooked everything together until the vegetables just started to get tender.
The recipe turned out delicious, and I used some extra vegetables I already had in the refrigerator at the same time.
