Chocolate Cake Cookies

 What can be easier?  Chocolate Cake mix used to make cookies!  Heather at Chocolate Bytes gives us a quick, easy recipe for a yummy snack:

1 (18.5 oz) package chocolate cake mix
1 teaspoon baking powder
2 eggs
1/2 cup vegetable oil
1 cup semisweet chocolate chips (optional)

Preheat oven to 350 degrees F. In a medium bowl, stir together the cake mix and baking powder. Add eggs and oil, then mix until well blended. Stir in chocolate chips or other choice of additions (chopped nuts, toffee bits, etc.). Drop by rounded spoonfuls onto cookie sheet.

Bake for 8-10 minutes. Allow cookies to cool on baking sheet for five minutes before removing to a wire rack to cool completely.

Heather also says it works with other cakes mixes (yellow, etc…).  Give it a whirl.
