Chocolate Peanut Butter Balls – Recipe

My oldest son and I are on our own for the weekend.
My other three kids are off to the coast with their Grandma and it’s pretty darn quiet around here right now.
I’m feeling the need for a snack. Preferably one with chocolate. Max, he’s a fan of peanut butter.
How about Chocolate Peanut Butter Balls?
Max has Cerebral Palsy and with that come some challenges with eating. Peanut butter balls are soft and easy for him to eat.
Chocolate Peanut Butter Balls
Ingredients:
2-3 c. semi sweet chocolate chips
2-3 squares unsweetened baking chocolate
6 c. powdered sugar
1 c. butter
2 c. peanut butter
1 t. vanilla
Directions:
In a double boiler, melt chocolate. In a medium bowl mix together sugar, butter, peanut butter and vanilla. Dough will be loose. Form 1-2 inch balls from the dough. Dip balls in chocolate with either a toothpick or a fork. Set on wax paper and cool. Makes about 3 dozen.
