Cooking with Clara: Peppers and Eggs

Another episode of Cooking with Clara is available! I somehow missed this one earlier but was glad to find it this morning. In this video, 93-year-old Clara, popular for her Great Depression meals, shows us how her family made a meal of peppers and eggs during the Great Depression.

The original recipe came from Clara’s mother, who made it for lunch for Clara and her family. Clara talks about how everyone loved the pepper and egg sandwiches and tried to get Clara to trade lunches with them. I love Clara’s stories!

To make the meal, you clean out and slice a few bell peppers and fry them in some oil. Crack and scramble four eggs and add them to the peppers once the peppers have softened a bit, and continue cooking until the eggs are done.

In part two Clara makes the bread for the sandwiches. Using five cups of flour, some warm water and two ounces of yeast, Clara makes a simple bread perfect for any meal.

  1. Just loved Clara’s personality and stories and recipes. What a joy she is, hope she is planning on doing her own cooking show on tv watch out Rachel Ray.
