Another tasty leftover for your St. Patrick’s Day Corned Beef is Corned Beef Hash with Poached Eggs and Hollandaise Sauce.There are many variations of Hash (as in the food). Hearty one-pot meals have been around since the Middle Ages. It is a food that was probably born out of necessity. The Danes call it “biksemad” or “tossed together food”. For centuries there is no doubt that people had to do something with their leftovers and tossing a bunch of food together helps it go a little further.
