Do green beans have to be green?

IMG 2221-1I found these beans at the farmers market last week. They look like green beans, smell like green beans, and taste like green beans, but they’re purple. So I guess that makes them… purple beans?

Inside they were green, and the outside color faded from brilliant purple to kind of a greenish-purple while they were steaming. Otherwise they really did taste just like their green counterparts. I served them with a squeeze of lemon juice and some salt and pepper.

  1. And they would look pretty impressive in a salad! I’m always looking for ways to entice myself into eating more veggies.

    Wow, you always have such unusual and interesting finds! I will go to my local farmer’s market more often but I doubt any British farmer would be adventurous enough to grow yellow courgettes or purple beans. I’d loved to be proven wrong though!

  4. I got a bag of those in my CSA last year - they are so very pretty raw, but if you cook them, you can’t tell them apart from the normal green ones.

    Not worth the extra money (if they cost more than the greens) unless you’re planning to use them raw.

    They look like a kind of heirloom bean that I used to grow - Purple King climbing beans. Prolific growing and very yummy.
