Easy Cornbread Muffins

It was one of those on the run days at my house, but in between trips I made some quick cornbread muffins to go with supper tonight. I thought I’d share the recipe here.

Easy Cornbread Muffins

1 cup flour

1 cup cornmeal

1/3 cup sugar

1 Tablespoon baking powder

2 eggs

1 cup milk

1/4 cup canola oil

1/2 teaspoon salt

Combine all the ingredients and blend together with a fork until smooth. Preheat your oven to 400` and spray muffin tins with no stick cooking spray. Fill each muffin cup about 2/3 full. Bake for 20 minutes, or until a toothpick comes out clean.

These muffins are wonderful hot out of the oven with a little butter. I always make a double or triple batch and throw some in the freezer for later.

This recipe makes about one dozen corn muffins.
