Easy Spanish Rice

One of the things I look forward to most when we go out to eat at a Mexican restaurant is the Spanish rice. Though there are a ton of variations I have yet to find one I haven’t liked! When I make Mexican food at home, the recipe below is one I like to use to go alongside tacos, enchiladas or anything else that needs a little extra something on the plate.

Spanish Rice

2 tablespoons vegetable oil
1 cup uncooked white rice
1/2 c onion, chopped
1/2 green bell pepper, chopped
2 cups water
1 14oz can diced tomatoes with green chiles
2 teaspoons chili powder
1/2 tsp cumin
1 teaspoon salt

Heat oil in a skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender. Stir in water and tomatoes. Season with chili powder, cumin and salt. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed. Serves 4.
