Easy Summer Lunch Idea~Chicken Pepper Pitas

I like quick lunches during the summer. Lunches that don’t make me slave over a hot stove. This easy recipe for chicken pepper pitas from Santa Barbara Bay is perfect.

The best part is, you can make the chicken ahead of time, when you’re making supper the night before. Just throw everything together at lunch time to make your pitas, and you’re ready to eat.

Chicken Pepper Pitas

1 pita, split in half

1/4 lb. grilled or sautéed chicken, chopped (NOTE: This recipe is perfect for using up leftovers)

Santa Barbara Bay Caramelized Onion and Roasted Garlic Dip

Red, yellow or green peppers

Red onion

Chopped fresh garlic

Romaine lettuce

Directions: Open pita and spread onion and garlic dip inside of each half, then stuff half-full with cooked chicken. Add onions, lettuce and peppers until the pita is full. Garnish with fresh garlic and add extra dip to taste.
