Eight Ways to Eat Watermelon

What’s summer–especially July–without watermelon? Watermelon is a refreshing way to get part of your daily fruit and vegetable quota as well as being a good source of Vitamins C and A. Below are our eight favorite ways to eat watermelon:

1. Cut up in wedges, unadorned.
2. Cut in cubes on small skewers and frozen for a cool, summer treat.
3. Hollowed up and used as a bowl for cut up pieces of watermelon and other fruit.
4. Pureed as a flavoring for summer smoothies.
5. Wrapped with (trimmed) Prosciutto as an appetizer.
6. Cubed over spinach and mushrooms, topped with a sweet and sour dressing.
7. As juice in a Watermelon martini. (Combine the juice with vodka, Cointreau, and just a little Grenadine in a martini glass.)
8. Cubed on skewers with cheese and turkey cubes for a fun, no-fuss meal.

    What about melon balls?

    Also, have you ever seen a watermelon rind a chicken has gotten a hold of? THEY know how to eat it all down to the bitter, bitter rind! : )
