Food Friday – Cheeseburger Rice

I like cooking, but now that I have two young kids, I like to make meals that are fast, easy, and if it can be done in one pot or pan, even better! This meal is perfect for those suppers that you need to squeeze in between the end of the school day and an evening activity. It takes very little time and pretty much no prep.

Cheeseburger Rice

- 1 lb ground beef
- 2 tbsp mustard
- 2/3 C ketchup
- 1 3/4 C water
- 2 C instant rice
- Cheese

In a large skillet, cook beef until completely done. Drain fat. Add mustard, ketchup, and water, mixing well. Bring to a boil, then add instant rice. Stir, then reduce to a simmer and cover skillet.

Let simmer for five minutes, then add cheese. You can use any shredded cheese, but my family prefers the processed cheese slices since they fit so well with the cheeseburger theme. Reduce heat to lowest setting, and cover until cheese melts, usually a minute or less.

Serve with a salad, eat, and go!
