Free At Last

To say this past week has been hectic is an understatement. Our little bug was sick and I finally, FINALLY logged in my last week at my 9-5 proper desk job. Needless to say, getting in any sort of real exercise was just not going to happen. How much weight have I lost so far? I wouldn’t even want to hazard a guess. I’ve certainly gained back the five pounds I lost due to the stomach flu. I think I am okay with it though. My goal here is to be healthier not necessarily skinnier. Although, who am I kidding? Skinny and healthy would be excellent.

We signed up for a service from our local natural foods grocery, that delivers a box of fresh, organic fruits and vegetables every week. It is AMAZING. It forces me to eat the stuff before it spoils. My latest concoction was so incredibly delish (if I may toot my own horn) I just had to share it with you. It was vegetable stir fry over brown basmati rice. What’s the calorie and fat info on it, you say? Haven’t a clue, I don’t do that. That’s much too much work for my tiny little brain. I think it’s pretty healthy so let’s go with that. You could use whatever you have around but I used: Swiss chard, snap peas, green chilies, fresh broccoli florets, minced garlic, kumquats and fresh ginger. I threw it all in a wok with two tablespoons of olive oil and sauteed for about six minutes on high heat. Simple, fresh and delicious. Next week, I may actually have time to go running.
