Oh, this is something I really could use. With one birdie out of the nest and two with one wing in and one wing out, I never know what to cook any more and for how many.
I’m finding that now I just grab things rather than making nice meals, even if just for my husband and me.

Ooh… me, me, me!! I love this idea- keeps you from grabbing something to make that you shouldn’t! This is my fave- one pot meal. So easy and healthy- can’t go wrong.
I just recently discovered Elizabeth’s sites and one-pot cooking. So far I have tried it twice, with the same recipe both times, using the shrimp, feta and cous cous recipe that is her current featured recipe. I enjoyed this meal so much that I blogged about it on my blog awhile back. I would love the opportunity to win her cookbook. That would be awesome. Thanks so much for hosting a giveaway!

This sounds like a great idea. I usually only use one pot to cook in, because it is simpler for the cooking challenged like myself. My favorite is chili, because it is low fat/calorie and tastes so good!
