Fruit Salad of Destiny

I don’t particularly like fruit. In fact I can say that most fruit frightens me; especially berries. Let’s not get into it. My son on the other hand LOVES fruit so I have had to come up with different ways to present it to him. I made a minty fruit salad the other day that I actually tried and enjoyed. I made a huge batch and we snacked on it for about three days. I think it will be a great Summer snack and it was so easy to put together. I used a combination of cantaloupe, honeydew melon, blueberries, kiwi and strawberries. You could probably use anything you wanted and adjust the quantities according to your tastes.

I added the juice of one lemon and one orange and tore up some fresh mint leaves. I would be careful with the mint because if you use too much it can overpower the natural fruit flavors. About 3-4 leaves seemed to be the right amount for me. It’s also a great post workout snack. We ran, well I ran while pushing a stroller, to the park and after a grueling slide session we sat on the grass and ate some of this. Really hit the spot. Any other suggestions for fruity concoctions? I might be a fruit convert now.
