Grilled Beef Fajitas

Fajitas, yum! Fajitas, salads, and wraps are summer favorites at our house. I have a beef fajita recipe for you today from Stockman and Dakota Premium Beef that you can make on the grill. Make a little extra while you’re grilling and chopping and you can make a delicious wrap or salad with the leftovers the next day.

Grilled Beef Fajitas

Prep Time: 15 minutes + marinating
Grill Time: 8-16 minutes
Amount: 6 servings

Ingredients:
1 (1 ½ pound) Stockman & Dakota™ Boneless Sirloin Steak
1 red bell pepper, quartered and seeded
1 green bell pepper, quartered and seeded
1 medium onion, sliced ¼-inch thick
1 (12 ounce) bottle Culinary Circle™ Mayan Fajita Marinade & Cooking Sauce
Fajita Toppings: tortillas, lettuce, tomatoes, cheese, sour cream, salsa, guacamole

Directions:
1. Place steak, peppers, onions and marinade in a 1-gallon recloseable food storage bag; seal. Toss to coat; refrigerate several hours or overnight.
2. Preheat grill to medium heat. Place steak, peppers and onions on grill. Grill steak, turning once, 8-16 minutes (depending on thickness) or until desired doneness is reached (145°F for medium-rare; 160°F for medium). Grill peppers and onions until desired doneness.
3. Remove from grill and allow steak to rest 5-10 minutes. Thinly slice steak; slice peppers and onions. Serve with fajita toppings.
Variation: Place desired amount of steak, peppers and onions in the center of a large tortilla; top with shredded cheese and roll up burrito style. Spray with no-stick cooking spray and place back on grill, seam-side-down. Grill 30-45 seconds; turn and continue grilling until golden. Serve with fajita toppings.
