Grilled Veggie Salad

I hope everyone’s Fourth was lovely, we had a blast. We went to a party and I had quite possibly the best salad I have ever had in my life. A big part of any weight loss plan is what you actually put into your mouth. It doesn’t have to be about deprivation though. It’s easy to load up on lots of fresh fruit and veggies and feel full and satisfied but not heavy and sluggish. The salad the host made incorporated a whole cornucopia of fresh veggies from her garden that she then grilled on over charcoal. I thought that was a great idea because it added a lot of flavor but also was an alternative to the usual backyard grill menu of ribs and hot dogs.

I’m pretty sure it would be good with just about anything but this one had zucchini, red peppers and eggplant that she had marinated in a vinaigrette before she put them on the grill. The warm veggies over a mixture of romaine hearts and butter lettuce and topped off lightly with dressing was SOO delicious. The dressing was basically fresh lemon juice, Dijon mustard, some fresh herbs, salt and pepper and extra virgin olive oil. I haven’t a clue what the exact measurements were but I found this recipe that looks pretty close. I am so in love with this salad that I am going to recreate it at home. We don’t have a grill so I think I will just put the veggies in the George Foreman. Lame I know but I think it will work. Does this sound like something you would look forward to eating? You could basically change up all the ingredients and use whatever veggies or lettuce you like. I may add some garbanzo beans for a little protein.
