Hamburger Soup

I haven’t made hamburger soup in ages, but today I had some hamburger leftover and suddenly thought my old recipe. I had to do it from memory, but this time I used the crockpot. It may be like the one you make, but if not, perhaps you’d like to give it a try.

soup

  • 1 pound of hamburger, cooked and drained
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 can of beef broth
  • 1 can of diced tomatoes (including juice)
  • 1/2 c. water
  • 2 Tablespoons ketchup
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups vegetables of your choice (I used corn, green beans, a couple baby carrots, and peas.) I added these in amounts my family likes. For example, less baby carrots and more corn. You can adjust this to the amount of veggies you have on hand or what your family likes.

Put everything except the salt and pepper into the crockpot and cook on high for 3 hours or low for 6-7 hours. About an hour before serving, add the salt and pepper.
