Herb-Roasted Potatoes

During my husband’s birthday last month, I made him what he wanted to eat which was fillet mignon. I added steamed asparagus and herb-roasted potatoes for the sides. Here’s a very basic herb-roasted potatoes recipe that anybody could make without any hassles.

Herb-Roasted Potatoes
INGREDIENTS :
- 3-4 pieces large potatoes
- 2 tbsp of olive oil
- 1 tbsp of dried basil
- 1 tbsp of dried oregano
- sprinkles of salt and pepper
Preheat the oven to 355°
Cut the potatoes in half lengthwise, then cut each halves in quarters.
Put in in a bowl. Sprinkle the olive oil, dried basil, dried oregano, salt and pepper. Stir everything together.
In a foil-covered sheet pan, distribute the potatoes evenly on top.
Bake it in the over for 40-45 minutes or until the potatoes are fork tender.
I told you it was easy. You can add other dried herbs like thyme, rosemary, etc, if you want. Serve this herb-roasted potatoes as a side dish to any meat or seafood entrée.
