If you’re like me, December means you have way more to do than you have time for — but if you cut corners by skipping meals and sleeping less hours, you’ll end up sick! Now more than ever, you need to be taking your vitamins, drinking plenty of water, eating nutrient-dense/ high-energy foods, and getting plenty of rest.
Here’s a good Web MD article with tips for 6 Ways to Keep Your Meals Healthy. One of the tips is to fill up on bean soup and salad before an entree. I agree. Beans are filling and full of fiber and protein.
I’m eating Tuscan white bean soup for lunch today. It’s made from a mix by Alessi Traditional — all I have to do is add a little olive oil and sprinkle with grated cheese. You can make your own bean soup by picking one of the dozens of recipes here from allrecipes.com.
