How beautiful is my salad?
I have a big salad for lunch almost every day. It’s nowhere near as boring as it may sound, since I make an effort to try new ingredients often. Even the type of lettuce I use varies according to the seasons and what’s available at my local stores and markets.
Today’s salad contained lamb’s breath lettuce, cherry tomatoes, red cabbage, cucumber, cooked beets, avocado, onion, and a sprinkling of flax seeds. I dressed it with some salt, fresh ground black pepper, white balsamic vinegar, and extra virgin olive oil. Not the absolute best tasting salad I’ve ever made, but it really wasn’t bad. Plus all those vibrant colors mean I’m getting a whole lot of nutrition in every bite.

Now THAT is what I call a salad! I used to eat a salad every day for lunch, too, but I got out of the habit once I left California. People tend to think “iceberg lettuce” and “droopy tomatoes” and maybe some Ranch dressing when they think of salads, but that is definitely not always the case! Great example…looks yummy.
Definately avocado! It’s great on everything!!!

My favorite salad is tuna nicoise. The one I eat has all my favs – tomatoes, hard boiled egg, and tuna!
Im not a vegan, so mozzarella cheese is always a must, with roasted red peppers, some mandarin oranges, corn, and even dried cranberries. Its the best salad in the world…and i could deffinatly live off of it.
Greek salad with cuke, tomatoes, black olives and mint! But not in the winter though. The weather being so miserable in the UK, I prefer a bowl of soup…
My favorite salad has field greens, avocado, lots of tomato, cucumber, red onion, green pepper, edamamme, sprouts, lemon, and fresh basil. Oh yummy!!
