Italian Meat Loaf

I don’t use any crackers in my meatloaf recipe. I give it an Italian flair (like meatballs). Italian meatloaf is one of my favorite comfort foods, I add in some diced potatoes and carrots for a full meal.
Our local grocery had their lean ground beef and 10 lb bags of potatoes on sale last week. The potatoes were $2 for a 10lb bag (I bought two), so potatoes have been on the menu for the last week or so. Good thing we all like potatoes!

Italian Meat Loaf With Potatoes and Carrots
1 lb lean ground beef or turkey (I use ground round)
1/3 cup shredded Parmesan
1 egg
3 Tablespoons Wocestershire sauce
1 Tablespoon Oregano
1 Tablespoon Basil
1 teaspoon minced garlic
1/2 small onion (chopped)
6 medium potatoes (diced)
1 cup diced baby carrots
1 teaspoon pepper
Mix together the ground beef, egg, Parmesan, Oregano, basil, onion, garlic, and Worcestershire sauce in a large bowl. Form into a loaf down the center of a 9×13 baking dish. Line each side with the potatoes and carrots. Sprinkle the potatoes and carrots with a little olive oil, oregano, and basil.
Bake at 350` for 40 to 50 minutes, or until the potatoes are tender and the meat is cooked through.
This dish is even better the next day for lunch.
