One of Murphy’s most popular and basic comfort food entrees is Spinach and Sausage Meatloaf, served with marinara sauce, green beans and mashed potatoes. On a cold fall or winter day, this dish is sure to warm your body and soul.

Italian Spinach and Sausage Meatloaf

Yields: 6 portions

Ingredients:

½ onion, small dice
1 teaspoon garlic, chopped
½ pound frozen spinach, well-squeezed and chopped
2 pound beef chuck, ground
¼ pound mild Italian sausage
½ pound spicy Italian sausage
1 egg
½ cup grated parmesan
½ cup bread crumbs
salt, pepper
small pinch of each: dried thyme, dried basil, dried oregano

Method:

Mix all ingredients together in a bowl

Work with hands for 1 minute

Form into a loaf onto a sheet tray

Bake covered with tinfoil at 350 F

Bake until just cooked through, 155 F internal, approximately 35 minutes
