It’s Mexican Week at Keeping the Castle

Have you checked out any of the Featured Blogs here at Blisstree? Karen has been featuring several Mexican recipes this week at Keeping the Castle and the dishes look delicious!

I love spicy foods, so I think I may have to give some of these recipes a try.

• On Tuesday Karen featured  a Pico de Gallo recipe that would be wonderful this summer with fresh tomatoes from the garden.
• On Wednesday there was a Black Beans and Rice recipe that would make a wonderful side to any Mexican dinner.
• Thursday Karen continued the celebration with Taco Soup.

I think I’ll try the pico de gallo first, then maybe the taco soup. Yum!
