Yesterday was National Chocolate Chip Cookie Day…who knew? Well, Martha did along with Nestle, of course.
They had done a unscientific taste test of the best Chocolate Chip Cookies and Jacques Torres’ recipe came out on top. He makes these by the tons on a daily basis, but narrowed the recipe so you can make a single batch at home.
As I watched her making them, I can see why. The best ingredients were used and some interesting variations. He uses both pastry flour and bread flour, four eggs and 2 lbs of chocolate….yes, 2 lbs of chocolate. The recipe makes 26 5 inch cookies, or 8 1/2 dozen 1 1/4 inch cookies.
