Leftover Meats Quesadillas

Instead of warming up last night’s leftover meat in the microwave how about turning that into a new dish for lunch or dinner. Chicken, pork, or turkey are good fillers for delicious quesadillas.

Leftover Chicken Quesadillas
INGREDIENTS :
- leftover meat (chicken, pork or turkey), shredded
- large flour tortillas
- chopped scallions
- chopped tomatoes
- shredded cheddar cheese
- a little bit of butter
On a griddle or non-stick pan, melt the butter. Place a flour tortilla. You can do the layering in 2 different ways, half or full.

Leftover Meat Quesadillas
1. Layer the meat, scallions, tomatoes and cheese on the half-side, then fold the other side.
2. OR, just layer everything flat, then add another flour tortilla on top. Cook each side 2 to 3 minutes or until cheese has melted. Use a flat spatula to flip the quesadillas gently.

Leftover Chicken Quesadillas
Cut the quesadillas in small wedges with a pizza cutter. This is actually an ideal lunch for the whole family during the weekends. Everyone is home and everyone can help out with chopping and spreading the ingredients on top of the tortillas. Cool huh?
